Cycling the south coast of france

Hi, me and some of my friends are planning a cycling trip from nice to Apt (north of aix en provence), preferably along the coast. Has anyone done this route or similar? or could anyone give me advise on routes and how hard this cycle is?
Any info would be helpful, thanks

not cycled it, but having driven parts, and worked near Beziers....

Much of the coast is campsite tourist land, and not 'unspoilt rural France'

A route a few miles inland parallel with the coast, whist more hilly, may prove to be more enjoyable, dipping to the coast for the good bits. There are loads of stunning villages, gorges and rivers inland

all depends on timescales, i suppose
